Ingredients to make Nalli Nihari
Mutton (pieces of Nalli) – 1 kg
Onion – 2-3
Ginger paste – 1 tsp
Garlic paste – 1 tsp
Wheat flour – 3 tbsp
Coriander powder – 2 tsp
Turmeric – 1/2 tsp
Nihari Masala – 3 tbsp
Lemon juice – 1 tsp
Green coriander leaves – 2 tbsp
Desi ghee – 5 tbsp
salt – as per taste

For Nihari Masala
Cumin – 2 tbsp
Black pepper – 1 tsp
Dry ginger – 1 tsp
Fennel seeds – 1 tsp
Big cardamom – 2
Bay leaf – 1
Cinnamon – 1 inch piece
Cloves – 5
Nutmeg grated – 1/2 tsp

How to make Nalli Nihari

To make Nalli Nihari full of taste, first of all, Nihari Masala has to be prepared. For this, put all the standing spices in a pan and fry them on a low flame. When the aroma starts coming from the spices, turn off the gas and let the spices cool down. After this, put the spices in the mixer jar and grind them to make a powder. Now take out the prepared Nihari Masala in a bowl and keep it aside.
Now take a deep bottom vessel and put 5 tbsp of desi ghee in it and heat it on medium flame. When the ghee melts, add finely chopped onion to it and fry till it turns light pink. After this, put mutton (pieces of tube) in the pot and fry them for 5 minutes after stirring them with a ladle. After this add ginger paste, garlic paste, coriander powder, turmeric and salt as per taste and mix.

When the mutton is well mixed with ghee and spices, add the prepared Nihari Masala according to taste and mix. Pour 8-9 cups of water on top and cook it till the mutton is cooked. For this, cover the utensil and slow down the gas flame. It may take 4-5 hours for the mutton to cook properly. After the fixed time, see whether the mutton is cooked or not, if it is not cooked then cook it until the mutton becomes soft.

When the mutton is well melted, put wheat flour in a bowl and add half a cup of water to it. Now mix this solution in the gravy while stirring it slowly. Now once again put the lid of the vessel and cook for 15 minutes. After this turn off the gas. Now add lemon juice and green coriander leaves to Nalli Nihari and mix. Tasty Nalli Nihari is ready, serve it hot.
